Storing Coffee

Keep your coffee in an airtight container in a cool, dry place out of direct sunlight, like the pantry.  Coffee exposed to oxygen, moisture, light and changes in temperature goes stale far more quickly and adversely affects flavour profile.  Which is why it is best to grind coffee on demand as ground coffee is more exposed to the air than beans.

What about the Fridge or Freezer?

Coffee is highly porous, so in the fridge it will absorb other food aromas and be affected by moisture.  It has not been scientifically proven that freezing coffee affects the natural oils, although extreme changes in temperatures is certainly not ideal.  If you live in the tropics the freezer is probably better than the outside humidity.

 

Using Fresh Coffee is Key

This can have a huge impact on the quality in the cup, especially grinding fresh coffee beans on demand.  Look for sealed packaging that contains a one way valve.  The valve allows CO2 to escape (fresh coffee gives this off) but prevents oxygen getting in.  You should be able to squeeze the pack and smell the aroma.   

 

So what is Freshly Roasted Coffee?

Ideally up to 2 weeks, however vacuum sealed packaging generally means coffee is as fresh as the day it is packed – of course to a point in time!

 

I like strong Italian style coffee, what do you recommend?

Italian Roast, when referring to a roast style, is a dark roast which produces a sharp yet sweet taste. This has less caffeine content in it that a lighter roasted coffee. There are individual single-origin beans and blends that are strong-tasting, and may not be a dark Italian roast.  Jasper Coffee roasts according to each Single Origin bean, seeking to draw out the varietal characteristics from each coffee as opposed to a “generic roast” flavour.

 

To gain the traditional strong, sharp yet sweet taste, we recommend our New Guinea coffees (Okapa, Sigri AA and Wild New Guinea) or the Billy DUNNE Blend.

 

Also great for espressos if you prefer a creamier taste would be our Sulawesi, Dominican Republic, or Sidamo. If you prefer a sweeter taste without the bite, the Columbian or Yirgacheffe are good choices. 

 

Why does my coffee taste bitter?

Coffee has a naturally bitter taste that is often mistaken for acidity.  However, if it is overly bitter as compared to what is acceptable, or if the same coffee you normally buy tastes vastly different, if could be due to many factors.  Dirty coffee maker, poor quality water, bad coffee or adding new coffee to old (used) grounds.

 

In an espresso coffee machine, the pour may be coming out too slowly and the coffee grounds in your basket are being burnt in the process. Check if the pour is dripping or trickling and if there are dark patches in your crema, if it is, try reducing the amount of force you are using to tamp your coffee and/or grinding your coffee slightly coarser.

 

If the pour is normal, ensure that you have cleaned your group head to make sure no grounds are caught inside.

What espresso cleaning agents do Jasper recommend?

Jasper uses the Australian Organic Standard compliant Caffetto Evo-Clean range of cleaners.  Depending on your machine, your coffee-drinking habits and your preferences, you may choose between tablets, sachets or powders. Ask your retailer for a recommendation.
