The Ethiopian Harrar Arsi in a hilltop city in the Eastern Highlands of Ethiopia called Harrar Coffee plantations began growing in this region over 2000 years ago, and thrive due to the perfect coffee growing conditions. This is a local heirloom coffee which is traditionally processed as sundried.
Sun-dried natural coffee processing is where the coffee fruit is dried on the bean to intensify the sugar and the unique flavours of the coffee itself. The tastes are accentuated through the altitude, soil and climate of the region.
The farms are small with community processing mills and usually located lower down the slopes of the mountains. The Harrar region is in the east and expands through the large wide desert areas towards Somalia. The climate is drier and warmer than the other coffee growing regions like Sidamo in the south or Djimma in the west. Historically, this coffee is demanded in Saudi Arabia, where it is roasted very lightly to a cinnamon color, but infused heavily with spices.
